Coconut macaroons are a delicious sweet treat, perfect for after dinner or as a little snack in the afternoon. Not only are they delectable, but very versatile! You can drizzle caramel or chocolate on them, top them with sprinkles or white chocolate with cranberries, the possibilities are endless! Ingredients:

  • 2 large egg whites
  • 2 cups sweetened, shredded coconut
  • 1/2 cup whole almonds, chopped
  • 1 tsp vanilla
  • 1/3 cup sugar
  • 1/4 tsp salt
  • Optional toppings such as chocolate, caramel, nuts, sprinkles, cranberries, etc.

Directions:

Preheat oven to 350 degrees.

Combine egg whites, coconut and almonds. Add sugar, vanilla and salt. Using a cookie scoop, portion out cookies onto a parchment paper lined baking sheet around 2 inches apart.

Bake until cookies are set and edges begin to crisp, around 15 minutes.

Allow to cool completely before adding toppings!
