Let's Make Pecan Pumpkin Loaf!

Autumn is here and so is the cold weather. This makes it the perfect time to bake a warm Pecan Pumpkin Loaf to fill your home with a cinnamon aroma and celebrate the upcoming holiday of Sukkot (the Jewish Feast of Tabernacles) with your family and friends.

Also, this recipe tastes wonderful with chocolate chips added, or substituted for the pecans. Try this recipe and celebrate the fall season!

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • ½ tsp. cinnamon
  • ½ tsp. salt
  • ½ tsp. cloves
  • 1 cup oil
  • 1 (16-oz.) can pumpkin puree
  • 1 cup pecans, chopped

Directions

Preheat oven to 350° F. Grease 5 mini loaf pans (5 ¾ x 3 ¼ inches).

In a large mixing bowl, using an electric or hand-held mixer, mix flour, sugar, baking powder, baking soda, cinnamon, salt and cloves. Add oil and pumpkin puree. Mix until smooth. Stir in pecans.

Pour batter into greased loaf pans. Bake for 50 to 60 minutes.
